Since 2018, Fort Negen has been crafting rich, juicy sourdough breads with a signature dark crust in Amsterdam. It all began with Maarten, who baked at the renowned Restaurant De Kas. Impressed by his bread, chefs from other restaurants began requesting it, prompting Maarten to expand beyond De Kas to supply local establishments.
Outgrowing the restaurant kitchen, Maarten moved to a backroom at BBrood, and within 18 months, Fort Negen found its permanent home on Jan Evertsenstraat 31. This new space allowed them to grow, offering a wider range of artisanal breads, pastries, and croissants.
Today, Fort Negen is more than a bakery—it’s a reimagined neighborhood hub, bringing their signature creations to even more people while shaping the future of Amsterdam’s baking scene.

We decided to try Fort Negen’s croissant ice cream which was a dessert dream come true! This generously sized treat is a perfect blend of textures and flavors that work together harmoniously. We went for the mix, one half is a rich, creamy croissant-flavored soft serve, with a velvety texture that captures the buttery goodness of their famed croissants. The other half is a refreshing, tangy berry sorbet that provides a delightful contrast, adding a fruity brightness that balances the richness of the soft serve.
Topping it all off is a crunchy chocolate cookie crumble that brings just the right amount of sweetness and texture to each bite. The combination is pure magic: creamy, tangy, and chocolatey with a satisfying crunch that keeps you coming back for more. It’s a big portion too, making it perfect for a leisurely treat or sharing.
